Food safety management systems

It is a legal requirement in terms of food hygiene legislation for all food businesses within the United Kingdom to put in place a Food Safety management System based on the principles of Hazard Analysis and Critical Control Points (HACCP).

This means that food businesses must have suitable and sufficient procedures in place, commensurate to the size and nature of operation, to manage food safety hazards within their business, which must be written down and supported by records to show that regular checks are made to ensure food safety obligations are met.

In order to assist food business operators within Perth and Kinross, inspectors provide personal guidance on site whilst conducting inspections or by appointment.

A template for a Food Safety Managment System (PDF) [179KB]  can be downloaded, if you require further assistance, please contact the Food Team using the details below.

As well as a Food Safety Management System, food businesses must also follow some basic Structural requirements when setting up a new business, these requirements can be found in the Structural Requirements for New/Renovated Food Businesses (Word doc) [51KB] document.
